Locally grown and sourced pastured or free range duck eggs. These ducks get lots of sunshine, fresh air, bugs, and room to stretch their legs! Eggs can range in color and size due to the variety of breeds and age of the ducks. Duck eggs are washed and candled before packaging.
You may see black, grey, or very light blue duck eggs in your carton! These are OK to eat! They are from a variety of duck called Cayuga and they lay eggs with a black colorant on their shell. As the duck gets older, it fades to grey, and then finally to a faint green/blue color. No matter their color, duck eggs are wonderful for cooking and baking. The albumen (whites) of duck eggs cook up firmer and as they are larger than chicken eggs typically are, you can use less! Your baked items will be moist and tender and less likely to dry out while baking. Finally - are you allergic or have a sensitivity to chicken eggs? You might be able to eat duck eggs! The protiens in duck eggs are different than in chicken eggs and many people are able to eat eggs again!
